Ich weiß nicht, ob Ursache oder Wirkung, aber der Time Out beim File System kann nicht gesund sein.

das ist mir auch aufgefallen @ottomane, das betrifft beide "Schlechtfälle". In beiden ist auch die Geschwindigkeit der SSD auf etwa die Hälfte herabgesetzt *und* ein (unbekannter?) Prozess "frisst" extrem viel CPU-Geschwindigkeit, einmal mit über 600% (das ist das, was ein 6Core kann) und einmal über 400%. Mit ca. der Hälfte der Leistung ist aber der FS-Zugriff (was auch immer EtreCheck da macht und wie relevant dieser "Test" auch sein mag) mehr als 4x so lang...

Das ist natürlich nur geraten, solange der Prozess weiter unbekannt ist (kernel_task?)*, aber das klingt danach, ob nicht nur CPU blockiert würde, sondern auch entweder gleichzeitiger SSD-Zugriff erfolgt und/oder die Belastung der CPU automatisch die Performance der SSD begrenzt (ich tippe eher ersteres).

*Lieber @Xermac , kannst Du im Schlechtfall die Aktivitätsanzeige aufmachen (Programme/Dienstprogramme), dort von "Meine Prozesse" auf Darstellung/Alle Prozesse umstellen, im Tab CPU nach der Spalte "%CPU" sortieren und den Prozessname in der Spalte mit >200% CPU benennen?

Ansonsten habe ich noch zwei Dinge:
1. Das Forum ist Hilfe zur Selbsthilfe. Eine Anleitung, wo man mal hinschauen kann und ein Stupser in einer Richtung (nicht immer die richtige ). Hier erfolgt keine Hardwarereparatur für kostenfrei. Das, weil das Liefern von irgendwelchen Messwerten ohne Kommentar nicht nur nicht hilfreich ist, sondern einfach gar nichts bringt, weil ohne Kontext. Die CPU-Frequenz über Zeit bringt nichts, ohne Erklärung, was wann gemacht wurde. Und ein Messwert (einmaliger Schnappschuss) von Sensor-Temperaturen erklärt auch nichts, wenn nicht klar ist, was so bedeutsam daran ist (ein Maximum?).
Ich will Dir wirklich nicht zu nahe treten, aber ich bin jetzt (fast) genauso schlau wie vorher. Ich hätte gehofft, dass Du irgendeine Regelhaftigkeit erkennst und dieser nachgehst... bis auf meinen Punkt 2:
2. Allerdings fällt auf, dass ab ca. 17:54 die CPU nicht mal mehr die 2GHz (Stock-Takt wohl 2,6GHz) erreicht und dann sukzessive auf 1,197GHz heruntertaktet. Klar, dass das als langsam empfunden wird.

Die Frage nur: Was ist Ursache, was ist Wirkung?

Wann kam der Prozess mit >400% CPU-Auslastung dazu?

Der Prozess "kernel_task" bremst den Computer aus. Der rasante Anstieg beginnt einige Minuten nach Start eines aufwendigen Programmes wie beispielsweise WoW und ist sicherlich die Ursache für den FPS und den damit einhergehenden kompletten Performanceeinbruch des Computers. Daher hatte ich ja vermutet, dass es sich dabei um die Temperaturregulierung handelt. Den Intel Power Gadget habe ich vor Beginn des Problems gestartet und dann durch Starten von WoW die Perfromanceeinbrüche während der Messung ausgelöst. Die Temperaturwerte habe ich von dem Moment aufgenommen, an dem der kernel_task sich einschaltet um den Computer auszubremsen.

wie gesagt, kernel_task ist eigentlich ein Sammelprozess für alles im Mac. Der schaltet sich nicht ein oder hoch, um etwas auszubremsen, sondern stattdessen ist es eher der Indikator dafür, dass etwas falsches passiert. Die Temperaturen sehen eigentlich nicht übermäßig hoch aus (aber das habe ich bei meinem MBP11.5 ja auch gesehen) - relevant ist nicht das, was ich meine, sondern welche Temperatur-/Lüfterkurven im Mac hinterlegt sind.

Eine Hypothese hätte ich - dass ein Sensor Amok läuft und viele Messwerte an das System liefert, deswegen der kernel_task als Symptom hohe CPU-Auslastung anzeigt und die hohe CPU-Auslastung wiederum die thermische Einregelung erzeugt (Turbo-Boost/Untertaktung). Das wäre ziemlich sicher ein Fall für eine Reklamation bei Apple, da Du ja sicher noch nicht aus der Hardwaregarantie raus bist. Dazu wäre zumindest ein Test mit einem clean install nicht verkehrt, ob sich das System damit genauso verhält.

Allerdings muss man einschränken: Dieser Regelungsmechanismus für Takt/Lüfter/Temperatur ist gewollt und wird immer auftreten - es ist nur jetzt die Frage, ob er unter den Temperaturen jetzt an der Stelle auftritt, wo er auftreten soll. Letztlich kann ich von hier außen nicht beurteilen, was Du testest.

Wie gesagt, ich würde einen clean install machen (parallel installieren oder extra USB-Stick), Schlechtfall reproduzieren und dann reklamieren.

Ja, die Temperaturen sind völlig normal und die Auslastung von kernel_task ist nicht die Ursache, sondern die Reaktion auf ein anderes Problem im System, möglicherweise ein Hardware-Defekt in der Peripherie.

Es wäre in EtreCheck hilfreich, sowohl im Programm selbst als auch in macOS den Festplattenvollzugriff freizuschalten, da sonst wichtige Teilergebnisse dem Datenschutz zum Opfer fallen.

Das Problem mit dem kernel_task konnte ich auch komplett ohne zusätzlich angeschlossene Geräte reproduzieren. Ich habe nun einen EtreCheck mit Festplattenvollzugriff durchgeführt und werde dann voraussichtlich die nächsten Tage einen Clean Install durchführen.

Ich habe den Adapter "Novoo" im Einsatz und damit Tastatur, Maus und Monitor verbunden. Allerdings zuvor nie Probleme damit gehabt. Es ist aber auch ohne angeschlossene Geräte ein deutlicher Leistungsabfall bei WoW zu erkennen,

Deswegen meine Frage, ob du deinen Mac schon mal total ohne diesen Adapter betrieben hast, seitdem dir das veränderte Verhalten aufgefallen ist. "Peripherie" kann auch ein kaputter Akku, Trackpad, GPU, T2-Prozessor, etc. sein.

mal ein blöder Verdacht, weil Du ja scheinbar immer dieses eine Spiel zum Testen hernimmst: kann es sein, das das irgendwas installiert? Schon mal den Hersteller/Support angefragt bzw. in Foren geguckt? Dabei nehme ich jetzt an, dass es aus zweifelsfreier Quelle vom Produzenten selbst stammt (aber das ist schon keine Gewähr für Fehlerfreiheit; auch von seriösen Herstellern hat es schon Produktionsware mit Malware o.ä. gegeben).
